FOUR CHEESES PASTA
Ingredients
400 gr. short pasta rigata
150 gr. parmesan cheese
70 gr. gruyere
70 gr. hollandaise cheese
70 gr. mozzarella cheese
60 gr. butter
70 ml cream
salt
pepper
Preparation
1. Put pasta in a deep 2 litres capacity pan.
Pour 700 ml. lightly salting boiling water
onto it, cover and place pan in the oven at
maximum heat for 3 minutes, keep on
cooking at medium heat for 10 minutes. Stir
two or three times.
2. Meanwhile, dice hollandaise, mozzarella
and gruyere cheese. Dice half of the
parmesan, choose the softer part, grate the
rest of it. Chop butter. When pasta is
ready, drain almost completely: save 4
tablespoons of water. Add diced cheese,
butter, cream, a pinch of pepper (freshly
ground if possible) and half of the grated
parmesan.
3. Mix well, cover the pan with a lid and let
it stand in the oven switched off for 4
minutes, so that the pasta complete its
cooking and cheese melt. Serve it really hot,
with more grated parmesan.

PENNE WITH TOMATO
AND CHEESE
Ingredients
300 gr. pasta (penne)
200 gr. mozzarella
3 big ripe tomatoes
olive oil
some leaves of very fresh basil
salt
pepper
Preparation
1. Cooking time needed for pasta in micro-
waves oven is not different from the
traditional method. Therefore boil pasta as
usual. With a fork, pierce the surface of
tomatoes, cut them in two lengthways, get rid
of seeds and arrange them in a pan
large enough for the pasta
2. Dust tomatoes with a pinch of sugar and
a pinch of pepper, then put them in the oven
set at the maximum heat for 3 minutes.
3. Drain the pasta add the cheese and finely
chopped basil.
4. Stir tomatoes in to the pasta , sprinkle
everything with four tablespoons of olive oil,
dust with a pinch of sugar and pepper. Put the
pan again in the oven set at the
maximum heat for 2 minutes, then serve it

MACARONI AU
GRATIN
Ingredients
400 gr. Macaroni (four servings)
30 gr. butter
30 gr. white flour
1,5 teaspoon of salt
a pinch of pepper
400 gr. milk
50 gr. grated emmental cheese
50 gr. grated parmesan cheese
Preparation
1. Put the butter in a casserole about 2 litres
capacity and melt it in the oven set at
maximum heat for 45-60 seconds. Add flour,
salt, pepper and, little by little, milk
warmed on the stove
2. Dust tomatoes with a pinch of sugar and
a pinch of pepper, then put them in the oven
set at the maximum heat for 3 minutes.
3. Carefully stir and put again in the oven
set on COMBI function at maximum heat for
4 minutes. Mix emmental and stir until it will
be completely melted.
4. Add macaroni cooked in plenty of salted
water, stir, dust the surface with grated
parmesan cheese and put over all flakes of
butter. Finally put in the oven set on
COMBI function at maximum heat for 5
minutes and then for 3 minutes with the
GRILL function.
NOTE: It s a very simple and quick recipe,
suitable even to use some leftover pasta, little
seasoned or unseasoned. The result is always
excellent.
