Streusel Topped Fruit Muffins Makes 12
Dish: 2 x 6 hole muffin tin + 12 paper muffin cases
Oven Accessory: glass turntable + metal tray
1. Melt the butter on HIGH power for 10-20 seconds. Combine
the streusel topping ingredients to make a soft dough and
reserve. Chill.
2. Sift together the flour, baking powder, sugar and salt. Add
the lemon rind and the fruit.
3. Melt the butter on HIGH power for 30 seconds - 1 minute,
mix in the buttermilk, egg and vanilla essence. Lightly stir in
the flour mixture and divide between 12 muffin cases.
4. Crumble small amounts of streusel topping over each
muffin and cook in two batches in preheated oven on
CONVECTION 180°C for 22 minutes, until browned and
well risen. Turn tin half way during baking.

170g (6oz) butter
170g (6oz) caster sugar
3 eggs, beaten

7g (1 tsp) baking powder

30ml (2 tbsp) warm water

1. Preheat oven on CONVECTION 150°C with metal tray.
2. Cream together butter and sugar until light and fluffy.
3. Add the eggs a little at a time, beating well after each
addition.
4. Fold in the flour and baking powder.
5. Fill the paper cases two thirds full with mixture. Cook in 2
batches.
6. Cook on CONVECTION 150°C for 25 min. Allow to cool.
7. For glace icing, sift icing sugar into a bowl. Gradually add
the warm water until smooth. Spread a little over each
cake.
V
ariation:
Add 75g (3oz) sultanas or 75g (3oz) chocolate chips in with the
flour and cook as above.
