Pumpkin 3/4 cup
Sour cream 1/4 cup
Vanilla 1 tsp.
Pecan nuts (chopped, toasted) 1/2 cup

In a small bowl, whisk together the •
all-purpose flour, the baking powder,
the baking soda, the cinnamon, the ginger,
the nutmeg and the salt.
In a large mixing bowl, use a mixer •
(medium speed) to beat together the
sugar, the brown sugar and the vegetable
oil. Beat in (medium speed) the eggs, the
pumpkin, the sour cream and the vanilla
until light and fluffy.
Beat in (low speed) the dry ingredients •
until moistened.
Stir in the pecan nuts.•
Put paper baking cups into each cupcake •
holder.
Fill each cupcake holder with batter.•
Bake the cupcakes for 6-8 minutes or until •
ready for consumption.
Allow the cupcakes to cool down on •
a baking rack.
Spoon the cream cheese onto the cooled •
cupcakes.
Decorate the cupcakes with pecan nuts.•

a dry and frost-free place, out of the reach
of children.
