BAKED SEA-BASS
WITH LEMON
Ingredients
1 sea-bass (about 800 gr.)
1 lemon
1 bay leaf
25 gr. Bread crumbs
2 tablespoons minced fresh parsley
1 grated lemon rind
1 egg
salt
pepper
Preparation
1. To stuff the fish, mix breadcrumbs, par-
sley, lemon rind, salt and pepper together with
the egg beaten enough to tied everything
2. Cut four very thin slices of lemon and
squeeze the rest. Sprinkle the juice in the hol-
low of the just cleaned fish, put salt and pep-
per as preferred. With a tablespoons stuff the
sea-bass and, with a sharp knife, make some
cuts both on the two sides
3. Put the fish on a large grease proof-water
sheet spread with butter and put under the
bay leaf and the slices of lemon. Fold up the
borders of the paper in order to obtain a
paper-bag containing the fish. Put it in a low
baking-pan and slip in the oven.
4. Cook at the maximum heat for 7 minutes
until the fish easily flakes off, turning it once
during cooking time. Let it stand in the oven
off for 5 minutes. Serve hot.
NOTE: Sea-bass is considered a choice fish
such as salmon. It s better to serve with a ve-
ry light sauce: mix cooking liquid with a little
cream and some minced aromatic herbs.
